Processing Plant ...
We started working on our new processing plant in November of 2006. We put our order in for our pasteurizer from the Netherlands. The anticipation was really high. It was Christmas when it came on the ship to Seattle. We drove to Seattle to pick it up. We had already had our 18 wheeler stainless steel container delivered and the electrical work done in anticipation of our pasteurizer arriving. The sink was in and the table too. The plumbing was in but the ditches still needed dug and then filled in. This is the point where David ripped his tendon in his arm while he was trying to save our pasteurizer from falling off the trailer. He did save the pasteurizer. This was near the last part of getting our processing plant up and going. We ended up having to have friends come and do the ditch digging and filling in the holes and finishing of the plumbing. As soon as we were inspected I started making cheese. David had to stand by me helping me run this modern machine. The cheese turned out and it was such a great feeling to make cheese here on our farm. Six weeks later David was allowed to start helping around the farm again. The new processing plant has been a real blessing as it was a drive to Adna to make cheese twice a week. Our new plant is a little cramped, but knowing it will be my cheese cave soon and the new plant will be next to it only a lot bigger in size. We have a two refrigerator/freezers, 2 shelves, and a work table inside the plant. We make our cheese, package it and then store it all in the plant right now.
